Our head baker Patrick Ryan brings over 4 years experience in catering and fine dining to the table. As well as his honours degree in corporate law, Paddy qualified with a National Certificate in Professional Cookery which was awarded with distinction from the Galway-Mayo Institute of Technology, and has had the opportunity to work in well-reputed eateries and fine dining restaurants around the world including Ireland, France and Australia.
Accolades include representing Ireland in a leading European cooking competition where he obtained a silver award and has also had the opportunity to work under leading Michelin starred chef Kevin Thornton's watchful eye.
Paddy is absolutely passionate about food, and it's his unwavering attention to detail and pursuit of perfection that make him the perfect person to run the bakery.
